Features: This textbook is divided into 14 chapters, with three chapters dedicated to microbial strains, summarizing the experience of frontline production personnel. Chapter 8, "Culture Devices," is typically discussed in fermentation equipment textbooks. However, due to the characteristics of vocational education (experimental hours accounting for about 50% of total class hours), a separate course on fermentation equipment is not offered. Therefore, we have included it in this textbook, and regions can select it based on actual needs. Additionally, due to space constraints, this book omits the detailed sections and instead places Gentamicin fermentation, L-apple production, and recombinant human erythropoietin (EPO) into Chapters 9, 11, and 12, respectively. These contents are summaries of the authors' production practices and hold certain reference value. This textbook is edited by Jiang Zhanzhang as the chief editor and covers Chapters , 3, 4, 9, 11, 12, and 14. Chen Haiyan wrote Chapter 8, Li Jun wrote Chapters 5 and 7, Huang Jinzhen wrote Chapters 2, 6, and 10, and Zhong Chengzan wrote Chapter 13 and the section on Gentamicin fermentation process.
