Features: We once wrote Chongqing Jianghu Cuisine with the intention of filling the gaps in authentic Sichuan cuisine recipes and contributing to the inheritance and promotion of Ba Yu food culture. Unsurprisingly, after its release, the appreciation for Jianghu cuisine spread across Sichuan, sparking interest and drawing diverse opinions from many friends who congratulated us. Their insights were invaluable. Encouraged by their support, we collected more "Jianghu dishes" and compiled them into this second volume of Chongqing Jianghu Cuisine for our readers. During the writing process, we visited and sampled various Jianghu restaurants with an attitude of "enjoying good food," referred to Sichuan Cuisine Cooking Dictionary, Sichuan Cuisine, Chongqing Flavor Hot Pot, and other materials. We were also greatly supported by Shi Shidai, General Manager of Chongqing Xiaodongtian Hotel, and Xie Wei, Deputy General Manager. We extend our gratitude to them all. The dishes in the photos were prepared by chefs from Chongqing Xiaodongtian Hotel and photographed by Chongqing Jinying Wedding Photography Studio. Due to the author's limited expertise, errors are inevitable in this book. We kindly ask experts and friends from all walks of life to kindly correct us.
