5 small crucian carps (approximately 200 grams)
[Seasonings]
Oil, chili oil, cooking wine, soy sauce, ginger slices, scallion sections, sesame oil, vinegar, sugar, sesame paste, salt, roasted sesame seeds, MSG, and Sichuan peppercorn powder in appropriate amounts
Instructions
1. Clean and pat dry the crucian carps, then place them in a container. Mix with 3 grams of salt, ginger slices, scallion sections, and cooking wine, and marinate for 30 minutes.
2. Heat oil in a wok over medium heat until it reaches 120°F (50°C). Add the crucian carps and fry slowly for 3 minutes. Remove and set aside. Once the oil reaches 140°F (60°C), return the crucian carps to the wok and fry until crispy and golden brown, then remove.
3. In a container, mix the sesame paste with sesame oil until smooth. Add sugar, 3 grams of salt, Sichuan peppercorn powder, minced ginger, minced garlic, MSG, soy sauce, vinegar, and chili oil, and stir well. Pour the crispy crucian carps into the mixture, then add roasted sesame seeds and toss evenly. Serve by removing the crucian carps onto a plate and garnishing with scallion sections.
