■ Ingredients: 200g fresh small silver fish, 200g peanuts, 1 green and 1 red chili.
■ Seasonings: Oil, chopped scallions, minced garlic, starch, soy sauce, cooking wine, chicken essence, pepper, chili powder, salt, and sugar, all in appropriate amounts.
■ Instructions: 1. Coat the small silver fish with a starch, deep-fry in hot oil for about 2 minutes until 80% crispy, then remove and drain the oil. 2. Deep-fry the peanuts until cooked; wash and chop the green and red chilies. 3.
