Northeast cuisine is characterized by its diverse flavors, clear distinctions between sweet and savory, tender yet crispy textures, vibrant colors, rich aromas, and glossy sauces, with an emphasis on presentation. Cooking techniques excel in stir-frying, quick-frying, braising, roasting, marinating, stewing, caramelizing, and hot pot cooking, with a focus on using local and green food ingredients. The knife skills are precise, the heat is well-controlled, and the dishes have rough appearances but intense flavors. Some dishes achieve textures like tender yet raw, translucent yet not tough, or tender yet not mushy, with crispy exteriors and tender interiors. The flavors are rich and aromatic, and the dishes are substantial and satisfying. Dishes like braised spareribs, braised pig trotters, braised chicken claws, braised chicken necks, and braised chicken livers, paired with mellow highland liquor, evoke a sense of boldness from the stomach, filled with the flavor of the northern frontier. As the saying goes, "cuisine reflects the people." Northeast cuisine, with its rough and straightforward style, is un details, much like the rugged and generous Northeasterners—bold, unorthodox, and appetizing, with generous portions that resemble the phrase "drinking big bowls of wine and eating large pieces of meat." Northeast China is rich in produce, with common ingredients but excellent quality. Dishes made from locally grown potatoes and vermicelli have unique flavors, let alone the abundant mushrooms, various wild greens, and coarse grains found in the region.
