Features: Now, vegetables are available all year round in the market. However, when eating vegetables, it's best to consider the season. Technicians once selected some vegetable varieties for seasonal studies, and the results showed that tomatoes purchased in July had twice the vitamin C content per 100 grams of edible portion compared to those in January. Similarly, summer cucumbers had about twice the vitamin C content of winter cucumbers, while the beta-carotene content in carrots was 1.5 times higher in June than in the depths of winter. Spinach is most nutritious when eaten in autumn and winter, but its nutritional content in spring and summer is only about one-eighth of that in winter. This is because spinach has significantly higher water content in spring and summer, with its solid components reduced by nearly half. The reason for the nutritional differences in the same crop is that plants produce varying amounts of nutrients after photosynthesis under different levels of sunlight. In other words, eating vegetables in their proper season allows you to absorb the maximum nutritional value.
