Dry-Fried Potatoes and Cowpeas

Ingredients:Pork belly、Potatoes、Cowpeas (long beans)、Ginger、Garlic、Red shallots (or pearl onions)、Sichuan peppercorns、Dried chili peppers、Cooking oil、Salt、Shaoxing wine (or cooking wine)、Light soy sauce

Steps for Dry-Fried Potatoes and Cowpeas:

1、Trim both ends of the cowpeas and cut them into 1-inch (2–3 cm) sections.

2、Peel the potatoes and cut them into strips. Rinse in water to remove excess starch, then drain well.

3、Prep the aromatics: slice the ginger, garlic, and red shallots; set aside the Sichuan peppercorns and dried chili peppers (cut into pieces if desired).

4、Heat oil in a wok or skillet. Add the sliced pork belly and stir-fry over low heat until the fat renders out and the meat turns golden and crispy.

5、Add the ginger, garlic, shallots, Sichuan peppercorns, and chili peppers. Stir-fry until fragrant.

6、Add the cowpeas and potato strips. Stir-fry over medium-low heat until they are cooked through and slightly charred (dry-fried texture).

7、Season with salt and light soy sauce. Stir well and serve.
