I had this dish at a tiny, hole-in-the-wall eatery in Changsha, and it left such a deep impression on me that today I decided to recreate it at home.
Steps:
1、Beat 4 eggs in a bowl and set aside.
2、Prepare the red chopped chili paste (剁椒酱) and mince some garlic. Also cut a few scallions into sections.
3、In a small bowl, mix the sauce: add some chopped chili paste, 2 tablespoons of soy sauce, 2 tablespoons of vinegar, a pinch of chicken powder, a pinch of white pepper, 1 tablespoon of sesame oil, and a little water. Stir well.
4、Heat a wok or pan over medium heat and add a little oil. Crack the 4 eggs one by one into the pan (keeping them whole, like fried eggs).
5、Fry until one side is set, then carefully flip and fry the other side until golden.
6、Pour the prepared sauce over the eggs.
7、Add the scallion sections and stir-fry everything evenly until well combined.
8、Serve hot.
