Of course, the realization of this aspiration depends on their learning and mastering of processing knowledge and skills. Strengthening the popularization and promotion of agricultural product processing knowledge for farmers is an effective path to prosperity, especially for those who wish to escape poverty and become wealthy, as well as for farmers and village collective economies with abundant resources but unable to realize their value. Writing this book was primarily motivated by the increasing demand for agricultural product processing knowledge in recent years. The Beijing Municipal Party Committee and Government proposed a strategy for farmers to get rich, including "processing agriculture" as part of the "Six Types of Agriculture," to vigorously develop the rural economy. Corresponding courses have also been set up in the junior college and university curricula for rural economy. However, there is a lack of comprehensive teaching materials in the market. Therefore, compiling this textbook serves both to adapt to the development of education in serving the rural economy and to align with the social development trend and the needs of all sectors of society. This is a comprehensive, concise, and accessible book that unifies the theory and operational techniques of agricultural product processing.
