Seasonality is highly valued, with distinct flavors for each season. Beijing's cuisine emphasizes seasonal ingredients. Aquatic products, poultry, and vegetables are available year-round, with hot pot lamb appearing after the start of autumn. Summer delicacies like crystal jelly and crystal shrimp have become highly popular in Beijing cuisine.
Accompaniments are given great importance, contributing to the unique flavor of Beijing cuisine. Before a wine banquet, guests are first greeted with fragrant tea and served delicate snacks like dried yam and dried jujubes to avoid the discomfort of drinking on an empty stomach. Beijing cuisine pays close attention to accompanying condiments and snacks. For example, hot pot lamb is considered truly authentic when paired with warm sesame flatbread. Finally, cabbage and vermicelli are served to cut the richness.
