Features: During the writing process of this book, special attention was paid to the following points:
1. The types of congee collected in this book focus on their culinary uses, and an effort was made to be comprehensive. Traditional varieties from various schools, innovative varieties, ethnic varieties, imperial varieties, and household varieties were all included as much as possible. However, pure medical congees were excluded since they are covered in dedicated books. For congee varieties that also have medical benefits, their functions are noted.
2. Due to the long history and widespread presence of congee in China, with numerous masters and significant contributions, respect for their labor and to enhance readers' interest, all collectible information about renowned masters, famous stores, as well as anecdotes, legends, and tales related to them, were briefly introduced in notes or small prefaces.
