Features: Chinese cuisine has a long history. Stir-frying is the most important of all cooking techniques and is widely used in households. Stir-frying is generally divided into four types:
The first is raw stir-frying, where the main ingredients are mostly raw, with little or no thickening, and are directly added to a hot wok and stir-fried over high heat until about five to six percent cooked, then other ingredients and seasonings are added and quickly stir-fried until done.
The second is cooked stir-frying, where large pieces of ingredients are first processed to be half or fully cooked, then cut into pieces, slices, or shreds, and briefly stir-fried in a hot wok. Ingredients, seasonings, or sauces are added in order, and everything is stir-fried evenly.
The third is dry stir-frying, where the main ingredients are added to the hot wok without any other ingredients or marination and are quickly stir-fried until golden brown on the surface, then ingredients and seasonings are added and stir-fried until the sauce is reduced.
The fourth is soft stir-frying, where raw ingredients are minced into a paste, mixed with seasonings and stock to form a smooth paste, poured into a hot wok, and continuously stirred with a spatula while adding a moderate amount of salad oil until the ingredients clump together and form a snow-like texture. This is a highly technical stir-frying technique.
This book will introduce cooking knowledge to a broad audience from the basic scope of cooking. It includes requirements and processing of ingredients, with the aim of guiding everyone to truly understand the key points of stir-frying. I sincerely hope that this book will help improve everyone's cooking skills, enabling them to create delicious stir-fried dishes.
