Features: Wheat is the world's second-largest grain crop, with an annual total output of about 600 million tons. With the development of science and technology and the improvement of human living standards, the processing industry based on wheat as raw material has rapidly developed worldwide. In developed countries, post-harvest wheat processing accounts for more than 90% of the total output. Specialized wheat flours for different food products have reached over 100 varieties. Post-harvest wheat processing products are widely used in various industries such as medicine, chemical engineering, alcohol production, feed, and more, significantly increasing the value of wheat. China is a major wheat-producing country, accounting for about one-sixth of the world's total wheat production. Due to the large proportion of rural population, China's post-harvest wheat processing industry lags behind that of developed countries. In particular, Henan Province, a major wheat-producing region in China, although having the highest total wheat output in the country, still lags behind the more developed eastern provinces in post-harvest wheat processing. During several consecutive high-yield years in the "Nineth Five-Year Plan" period, this led to temporary and phased accumulation of wheat. Faced with this situation, the provincial government introduced and launched projects such as wheat-based ethanol production, ethanol gasoline production, and wheat extraction for. At the same time, it increased investment in science and technology for industries related to post-harvest wheat processing. According to the needs of industry development, it focused on breakthrough research on key technical challenges in wheat-based monosodium glutamate production, wheat-based beer production, wheat as feed, and specialty wheat flour production. Starting in the "Tenth Five-Year Plan," Henan Province established the first major scientific and technological research project in the history of post-harvest grain processing in the province—Research and Industrial Development of Wheat Post-Harvest Refining and Deep Processing Technology. The Henan Provincial Science and Technology Department organized universities, research institutes, and more than ten enterprises to jointly tackle the research. Over a period of three years, breakthrough progress was achieved in key technical research and development applications related to wheat-based monosodium glutamate, wheat beer, anti-nutritional factors in wheat, and specialty wheat flour. A number of technical difficulties were resolved, and several achievements reached a domestic leading level. These research results and product developments have strongly promoted technological progress and efficiency growth in enterprises, fully demonstrating the important role of science and technology in industrial production. To summarize the research results over the years and promote their application in relevant enterprises, we compiled the book Theories and Technologies of Wheat Post-Harvest Processing. This book comprehensively presents the latest research results in the aforementioned four aspects, systematically elaborating both theories and specific technologies, making it a combined work of theory and technology. It can serve as a reference for technical personnel in related enterprises to apply specific technologies in actual production, as well as teaching materials for students and teachers in universities and colleges. We hope that the publication of this book will contribute to the development of the post-harvest wheat processing industry.
