Features: Over the past century, with the spread of Western culture worldwide, Western cuisine has been embraced by an increasing number of people globally. In China, with the development of the tourism industry and the improvement of people's living standards, the Western cuisine industry has also seen significant growth. Currently, China's culinary education has begun to take shape, but there is still a shortage in the training of Western cuisine professionals and the popularization of Western cuisine education. This textbook was specifically developed to address this gap. It can serve as a teaching material for higher culinary education and also as a reference for Western cuisine professionals and enthusiasts. Although this textbook is designed for higher culinary education, considering that most students lack a background in Western cuisine, the starting point of this textbook is not high, and its content is relatively comprehensive. It also includes some highly challenging techniques. In the selection of recipes, it strives to include typical dishes from major Western countries while also catering to both traditional dishes and modern ones that represent contemporary trends.
