Chicken with Sesame Oil Ingredients:
1 chicken leg, 12 scallions
Seasonings:

Method:
1. Cut the chicken leg into small pieces, blanch them first to remove blood, then rinse clean.
2. Wash and cut scallions into small pieces. Sauté with 3 tablespoons of oil until fragrant and crispy, then add all seasonings and bring to a boil.
3. Add the chicken pieces, reduce heat, and simmer until the flavors are absorbed. When the broth slightly thickens, remove from heat.
Celery and Tofu Dried Ingredients:
2 celery stalks, 4 pieces of five-spice tofu dried
Seasonings:
1/2 tablespoon soy sauce, 1/4 teaspoon salt, a little MSG, 4 cups water
Method:
1. Remove the leaves and roots of the celery, wash, and cut into small pieces.
2. Wash the tofu dried, cut into strips, and sauté with 3 tablespoons of oil until fragrant. Then add the celery and all seasonings and stir-fry together.
3. Serve immediately after mixing well.
Pea Sprout Egg Dumpling Soup Ingredients:
75g pea sprouts, 150g egg dumplings
Seasonings:
1/2 teaspoon salt, a little pepper, sesame oil
Method:
1. Boil 3 cups of water, add the dumplings, then reduce heat to simmer.
2. Remove the tender leaves of the pea sprouts, wash, and add to the soup when it boils. Season with salt and serve.
3. Add pepper and sesame oil when serving.
Key Tips:
1. If you have ready-made sesame oil, you can add it directly when cooking the chicken pieces.
2. You can substitute the chicken pieces with ribs; the method is the same.
3. Hollow celery is crisp and can be cooked with a little water to retain some broth. Otherwise, the tofu dried may easily burn due to insufficient moisture.
4. In the off-season for pea sprouts, you can substitute with spinach or small cabbage.
