Features: Since 2001, during the Shanghai Tourism Festival, the Shanghai Tourism Administration Commission and the Shanghai Commercial Commission have organized the "Shanghai Cuisine Exhibition and Sales Week" event, which has been co-hosted by the Shanghai Hotel Industry Branch of the Shanghai Tourism Association, the Shanghai Culinary Association, and the Shanghai Food and Beverage Industry Association. Nearly one hundred restaurants have showcased over a thousand new Shanghai cuisine dishes. After expert evaluation, a selection of the exhibited dishes is annually included in the list of Shanghai's famous dishes and specialties. To help overseas and domestic visitors better understand Shanghai's culinary culture and taste new Shanghai cuisine, this series of books titled "Shanghai Famous Dishes and Specialties" has been compiled. This book is the second installment following the "Shanghai Famous Dishes and Specialties" published in 2001. It features 171 photographs and recipes of Shanghai's famous dishes and specialties. It is hoped that this book will serve as a guide for culinary consumption.
