Features: Curry is a product of India's long and rich history of invasions. Following the Mughal conquerors, a culinary army brought Persian recipes to northern India; Portuguese spice merchants introduced pickled juices and chili peppers, newly discovered in the Americas, to the south; soon after, the British arrived, bringing with them their passion for roasted meat with cauliflower and beans as accompaniments. After mixing these new ingredients with local spices like cardamom and black pepper, the delicious Indian cuisine—curry—was born. Later, the British brought curry back to England, making it a staple dish at Victorian dinners. After World War II, Bangladeshi sailors made curry the new national dish of Britain by opening Indian restaurants and takeout places in London.
