Ingredients: 1000g flour, about 400g cold water
Instructions:
① Knead the dough well and let it rest for 30 minutes.
② Roll the dough into a sheet about 5mm thick using a large rolling pin. Use a knife to cut the center of the sheet along the rolling pin, creating two connected, thin strands with the ends uncut. Sprinkle dry flour on the strands, then roll the ends of the sheet up with both hands and slowly stretch them apart to lengthen the noodles.
③ Cut off the connected ends with a knife, separate the noodles, and repeat the process with the remaining dough.
④ Bring water to a boil, add the stretched noodles to the pot, and cook until done. Season and mix with condiments, or add some toppings while cooking to create your favorite noodle soup.
TIPS: When kneading the dough for hand-pulled noodles, add more water than for hand-rolled dough to make a slightly softer dough. Let it rest before stretching. Apply even pressure with both hands and avoid breaking the dough.
