Ingredients:
200g pork tenderloin, 50g bamboo shoots, 25g waterlogged wood ear mushrooms, 40g pickled red chili peppers,
? tsp (3g) salt, 2 tsp (10g) ginger paste, 3 tsp (15g) garlic paste, 2 tsp (10g) scallion greens,
2 tsp (10ml) light soy sauce, 2 tsp (10ml) vinegar, 2 tsp (10g) sugar, 1 tsp (5ml) cooking wine,
? tsp (3g) chicken essence, 25ml starch slurry, a little fresh stock, and oil as needed
Instructions:
1. Wash the pork tenderloin, cut it into long, thin strips, and mix it with a little salt, starch slurry, and cooking wine to ensure the meat absorbs the flavors fully.
2. Finely chop the pickled red chili peppers. Wash the bamboo shoots and wood ear mushrooms, cut them into thin strips, and blanch them in boiling water, then set aside.
3. Mix the light soy sauce, vinegar, sugar, chicken essence, starch slurry, fresh stock, and salt together to create the fish-fragrant sauce, then set aside.
4. Heat the wok over high heat, add oil until it reaches seven degrees, add the pork strips, and stir-fry until scattered. Add the pickled red chili peppers, ginger paste, and garlic paste to stir-fry until fragrant, then add the wood ear mushroom strips, bamboo shoot strips, and scallion greens. Stir-fry well, pour in the fish-fragrant sauce, and quickly stir-fry until cooked. Serve immediately.
Tips:
1. For the best flavor, choose pork tenderloin with 70% lean meat and 30% fat. This selection will make the dish more authentic.
2. Unlike Dalian-style fish-fragrant pork slivers, Sichuan-style fish-fragrant pork slivers have a stronger sweet and sour flavor, and the meat is completely coated in sauce. This results in a rich sauce flavor, and sometimes the leftover sauce can even be used as a side dish.
