Features: Edamame can alleviate fatigue and calm the mind. The mineral potassium in edamame can stimulate the kidneys to excrete toxic substances, reduce fat buildup in blood vessels, prevent atherosclerosis, and benefit those with mood disorders and nervous tension. However, edamame is high in purines, so it is advisable for people with gout or kidney disease to consume it in moderation.
Black Pepper Edamame Ingredients:
- Edamame: 300g
- Seasonings: Salt: 1 teaspoon, Black pepper: to taste
Instructions:
1. Wash the edamame in their pods and add them to a pot with enough water to cover them. Boil, then reduce heat and simmer for 10 minutes. Add salt and turn off the heat, letting it steam for another 10 minutes.
2. Drain the water and mix in black pepper.
Boiled Edamame Pods Ingredients:
- Edamame pods: 200g
- Carrot: 1 small piece
- Seasonings: Light soy sauce: 1 teaspoon, Sesame oil: ? teaspoon
Instructions:
1. Rinse the edamame pods, blanch them in boiling water (add a pinch of salt), then drain.
2. Grate the carrot into a paste. Mix it with the edamame and seasonings along with the juice.
◎ The thin membrane of raw edamame is difficult to remove. It’s best to blanch them first.
P43 Peas, also known as snow peas or Dutch peas, contain protein, fat, carbohydrates, ash, vitamins A, B1, B2, C, and minerals such as calcium, sulfur, iron, phosphorus, potassium, and magnesium. They can promote urination, stop diarrhea, quench thirst, relieve breast engorgement, and alleviate conditions like athlete’s foot and diabetes. However, people with weak stomachs should avoid excessive consumption of peas to prevent bloating. Due to their high purine content, peas are not suitable for those with gout or kidney disease. The pods are rich in fiber and won’t cause bloating like whole beans. Pea sprouts are beneficial for alleviating symptoms of athlete’s foot, diabetes, and menopausal discomfort.
Pea Rice Ingredients:
- Rice (jasmine or brown): 2 cups
- Water: 2 cups
- Peas: ? cup
- Cabbage: 200g (shredded)
- Shiitake mushrooms: 1 tablespoon (chopped)
- Seasonings: Salt: 2/3 teaspoon, Pepper: a pinch
Instructions:
1. Wash the rice and add 2 cups of water to a rice cooker to cook.
2. Sauté the mushrooms with oil, then add the cabbage and continue stir-frying. Add seasonings and peas, stir well.
3. Once the rice cooker switches off, quickly add the stir-fried cabbage (including the cooking liquid) and mix slightly. Continue steaming until the rice is fully cooked.
