Features: The people of Guangdong are renowned nationwide for their love of food, as the saying goes, "Food in Guangzhou is the best in China." With the improvement of living standards, people are now not only concerned about how to eat well but also about how to eat healthily and nutritiously. It is well-known that whether the nutrition in our diet is balanced, whether our dietary structure is reasonable, and whether our eating habits are scientific are related to our physical strength, our ability to effectively prevent diseases, the physical and intellectual development of children, and whether the elderly can live a healthy and long life. However, in real life, due to the influence of traditional dietary concepts and a lack of nutritional knowledge, many people in Guangdong, despite being very particular about food, still have unreasonable food choices or combinations, falling into some misconceptions. For example, they regard soup as an important means of supplementing nutrition; believe that delicacies are the most nutritious; eat more meat and less rice; and think that vegetables are cold and avoid eating too many of them. These misconceptions may, on one hand, lead to a lack of certain nutrients in our bodies, such as calcium and iron, causing conditions like osteoporosis and anemia. On the other hand, they may also lead to nutritional excess, such as excessive energy and fat, causing "valuable diseases" like hyperlipidemia, diabetes, cardiovascular diseases, and even cancer. It is clear that correcting unscientific dietary concepts is very necessary. As nutrition professionals, we hope to guide everyone out of dietary misconceptions through this book, help them establish a correct nutritional perspective, and better ensure our physical health.
