Features: In the general perception of ordinary people, ready-to-eat food is just everyday home-cooked dishes, a kind of processed product. The term "ready-to-eat food" originates from the German word "Delikatessen," which can be translated as delicacies. In recent years, ready-to-eat food stores near department stores or office buildings have been doing very well. The reasons for this are varied: some people believe that ready-to-eat food tastes better than food cooked at home, while others think they can buy some to try new flavors at will. Some people may even want to cook themselves but lack the time, and so on. The selection of this book is mainly centered on French-style ready-to-eat food, such as meat sauces, meat rolls, processed pork products, various foods made from different types of dough, various filled meat aspics, pickled products, and stewed ready-to-eat dishes. Additionally, it specially introduces the methods of making smoked foods and bread products, hoping that these contents can serve as a certain reference for many chefs engaged in ready-to-eat food production. The greatest feature of ready-to-eat food is that customers can take it away from the store, and it can be stored in the store, such as in a refrigerated display, for a relatively long time. This is quite different from dishes cooked in restaurants, so when explaining the methods of making various ready-to-eat foods, the focus is mostly placed here. Whether it is any dish or food, it is most delicious when freshly cooked. In this regard, ready-to-eat food cannot be an exception either. Of course, the cooks of ready-to-eat food are fully aware of this issue, but since it is ready-to-eat food, it is always cooked first before being sold. After customers buy it, although they can reheat it before eating, its color, aroma, and flavor will be greatly reduced. This is an important issue that must be addressed in the future. The various ready-to-eat foods introduced in this book, whether produced in large quantities in ready-to-eat food stores or cooked by individuals in restaurants, must be consumed within one day after cooking. Additionally, the serving methods of ready-to-eat food are entirely up to personal preference, so this book does not focus on explaining this issue. Nevertheless, some reference examples are provided in the black-and-white finished dish photos and the serving method section of this book.
