Features: Chicken feet mushrooms are easy to cultivate and can be grown using mature substrate cultivation and fermented substrate cultivation, with high yield. They are suitable for a wide range of raw materials, such as cottonseed hull, corn core, mushroom residue, and crop straw. Large-scale cultivation began in China in the early 1990s and was rapidly promoted nationwide. In Sichuan, various facilities have been utilized to achieve year-round bulk production. In recent years, countries like the United States, Japan, the Netherlands, France, Germany, and Italy have also started cultivating chicken feet mushrooms. Fresh, dried, salted, and canned chicken feet mushrooms all have good market demand, and salted and canned products are now available. Based on years of experience in the biology of chicken feet mushrooms, breeding techniques, various cultivation methods, including off-season cultivation facilities and fruiting management, as well as pest and disease control and processing methods, the authors have compiled this work.
