Segment: 2 Classification of Eggplants Eggplants have a long history of cultivation in China, with numerous types and varieties. They are classified into three varieties based on fruit shape.
2.1 Round Eggplant Round eggplants (see Figure 2.1) have tall plants and large fruits, which are spherical, flattened spherical, or ellipsoidal. The skin can be purple, dark purple, red-purple, greenish-white, or white.
2.2 Long Eggplant Long eggplants (see Figure 2.2) have medium growth vigor, with slender, cylindrical fruits that can reach 20–30 cm in length, and some even exceed 30 cm. The skin is thin, and the flesh is tender. The skin can be purplish-red, dark purple, green, or light green.
