Fragment: 2 Classification of Chili Peppers People usually classify chili peppers into "pungent peppers," "sweet peppers," and "mild peppers" based on their heat levels. However, botanically, they are primarily classified according to their different morphological characteristics. Biologist Carl Linnaeus was among the first to classify chili peppers into two species: annual chili peppers and shrubby chili peppers. According to literature records and recent surveys of chili pepper resources in China, as well as the collection and preliminary identification of local varieties across provinces, municipalities, and autonomous regions, it has been determined that there are two species in China: annual chili peppers and shrubby chili peppers. The vast majority of chili pepper varieties cultivated across the country belong to the annual chili pepper species. Based on the shape of the chili pepper fruits, the characteristics of the calyx at the base of the fruit, the size of the fruit, and the thickness of the flesh, annual chili peppers are further divided into the following varieties:
2.1 Long-Angle Pepper
This species of chili pepper is widely distributed in China, with relatively tall and robust plants, generally strong branching, and numerous fruits per plant. The pedicels curve downward, and the fruits hang down. The fruit shape is long conical or thick long conical, with a pointed tip that is often curved. Depending on the length and thickness of the fruit, they can be further divided into ox-horn peppers and sheep-horn peppers. The fruit length is 10–27 cm, the diameter is 1.7–4 cm, the flesh thickness is 0.15–0.3 cm, and the weight per fruit is 10–40 grams. The flesh contains a moderate amount of water, with a slightly spicy or spicy flavor, making it suitable for fresh consumption, stir-frying, pickling, or as a condiment. These varieties are disease-resistant, high-yielding, and highly adaptable, making them very popular. Examples include Chifeng Big Ox-Horn Pepper, Long Pepper No. 4, and Bulgaria Sharp Pepper.
