Features: Chinese cuisine is profound and vast, with diverse styles, forming various schools and culinary traditions. However, these schools are not isolated from each other but rather interact and learn from one another. While maintaining their unique characteristics, they continuously innovate and progress, creating new schools in the process. The New School Cantonese and Hong Kong Cuisine introduced in this book is a fusion and innovation of Cantonese and Hong Kong cuisines. As a gradually maturing culinary tradition, New School Cantonese and Hong Kong Cuisine has garnered significant attention. Yet, systematic introductions to this school seem scarce. In response to this, we have specially invited two accomplished chefs in New School Cantonese and Hong Kong Cuisine—Senior Hong Kong Chef Tan Guiyuan and the rising star of the Southern Cantonese culinary scene, Chen Hongbo—to write this book. This book showcases the essence of New School Cantonese and Hong Kong Cuisine, featuring nearly 100 representative dishes, each crafted with meticulous care by the authors. It provides in-depth yet accessible explanations of the ingredients and cooking methods for each dish, accompanied by step-by-step process illustrations for every recipe. The visuals complement the text, and the book specifically analyzes the innovative approaches and unique features of each dish, hoping to inspire readers to draw inspiration and further advance the development of New School Cantonese and Hong Kong Cuisine.
