Features: Food carving is a culinary activity that shapes hard materials like vegetables, fruits, and soft materials such as dough, sugar, and butter into artistic forms. Using carving tools such as food carving knives, dough sculpting knives, oil sculpting knives, and ice carving knives, it employs techniques like cutting, shaving, scooping, and hollowing for carving, as well as softening, rolling, wrapping, pressing, and pinching for shaping. This art integrates cooking and aesthetics, creating edible works that are both functional and artistically appealing, making it a unique gem in China's sculptural art. The "Teaching and Learning of Food Carving" series—comprising "Floral Sculptures," "Bird Sculptures," "Mammal Sculptures," "Human Figure Sculptures," "Dragon and Phoenix Sculptures," and "Dough Sculptures"—has been published. This is another significant work by our unit's young culinary teacher, Zhang Weixin, following his book "Chinese Banquet Food Carving." Over the years, he has diligently studied, actively pursued innovation, and achieved remarkable accomplishments in Chinese cooking, particularly in food carving. He has won numerous awards in national and provincial competitions, published several culinary books, had his works featured in various newspapers and magazines, and was even featured in an interview by China Central Television. In addition to teaching, he is often invited to design and create large-scale banquets at hotels and restaurants such as the Great Wall Hotel and Quanjude Roast Duck Restaurant, receiving unanimous praise. The "Teaching and Learning of Food Carving" series is characterized by the following:
1. Pioneering Concepts and Thought Leadership: The series reflects the author's new insights and perceptions of food carving, promising to guide readers into a fresh realm of culinary artistry. The author has tirelessly researched and explored knowledge in cooking, folk customs, arts and crafts, food ingredients, historical geography, and architectural design, continuously innovating and pushing boundaries. His refined knife techniques, skilled craftsmanship, and cleverly conceived, lifelike sculptures are full of vitality and creativity, often standing out with their uniqueness.
2. Innovative Format and Comprehensive Content: The series showcases meticulous ingenuity in both content and form, venturing into new territory. It categorizes various themes such as flowers, birds, human figures, mammals, dragons and phoenixes, and dough sculptures into separate volumes, providing detailed descriptions.
3. Unique Techniques and Clever Designs: Beyond conventional methods like piercing, rotating, and straight cutting, as well as softening, rolling, and pressing, the book emphasizes advanced techniques such as scoring, hollow carving, tremolo carving, wrapping, and filling. These techniques are simple to learn, highly practical, and easy to apply, enabling readers to master and utilize food carving skills more efficiently.
