Featured Dish: Fragrant Scallion Oil Chicken
Main Ingredient: 1 whole yellow-boned chicken (about 1000 grams)
Subingredients: Scallions
Seasonings: Cinnamon stick, star anise, ginger, chicken broth, cooking oil, salt, chicken essence, sesame oil
Preparation Method:
1. Place the cleaned chicken in a pot with water, add cinnamon stick and star anise, and cook until almost done. Remove the chicken.
2. Place the cooked chicken in a large container and coat it with sesame oil. Let it cool, then tear it into pieces and arrange on a plate.
3. Heat oil in a pot. When it reaches 70% heat, add scallion segments, minced ginger, salt, chicken essence (use less broth), and heat to a boil. Pour the mixture over the chicken.
Features: Fragrant yet not greasy.
Key Points:
1. Cook the chicken until almost done without overcooking to maintain tenderness. You can check by piercing the wing root or back with a toothpick—it should go through easily.
2. The broth must be rich and flavorful, and poured over the chicken while hot.
